Sweetness All Through the Yomim Noraim

Delicious and Easy Honey Cookies

(makes a ton)

Preheat oven to 350 F.

6 eggs

1 ½ cups sugar

1 cup honey

1 cup oil

6 cups flour

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon allspice (I omit)

In a large bowl, combine first four ingredients. Sift in flour. Add last three ingredients. Mix together. Drop by tablespoonfuls onto a greased cookie sheet. Bake until light brown for 10-15 minutes.

Almond Cigars

(From across the U.S.-Canadian Border)

30 phyllo leaves

1 egg white, slightly beaten

Oil, for deep frying

Filling:

2 cups unblanched almonds

1 cup sugar

Grated rind of 1 lemon

2 eggs

Syrup:

2 cups sugar

1 cup water

1 cup honey

Place almonds into boiling water for about 15 minutes, and then peel them. Dry them well. Grind the almonds and add the sugar, lemon rind and eggs, mixing well. (You could buy ground almonds.)

Fold each phyllo leaf in half, lengthwise, and place 1 tablespoon filling 1 inch from the bottom edge. Fold sides of the strip into the middle and roll up to the edge.

Brush with beaten egg white, using it also to seal the cigar. Deep fry in hot oil until golden, and drain.

Prepare syrup by heating the sugar and water over medium heat until thick, and add the honey.

Dip the cigars into the syrup one at a time. These will freeze well for up to 3 months. Bon appétit!

‘Special Occasion’ Pistachio-Stuffed Top Round

2 pound top of rib (pounded thin)

In a skillet saute:

2 tablespoons oil

½ large onion, chopped

1 clove minced garlic

½ cup chopped mushrooms

Cook above ingredients for 3 minutes and add:

¼ cup pistachio nuts, coarsely chopped

¼ cup parsley

1 ½ cup bread cubes

½ teaspoon oregano

¼ teaspoon basil

½ teaspoon salt

Ground pepper

1 egg, slightly beaten.

Spread mixture on meat. Roll lengthwise as for jelly roll and tie with string at 2-inch intervals. Brown meat on both sides in a little oil in a skillet or heavy roasting pan. Add ½ cup wine.

Cover and bake for 2 hours at 350 F. Cut into 1-inch slices and serve with pan drippings.

This recipe is well worth the amount of work to make!
