Try Cedar Market’s New Quinoa Sushi and Satisfy Your Cravings on Pesach

Ashkenazim do not eat rice on Pesach. That is well known. So what’s a girl (or guy) craving sushi to do for eight whole days??

Fortunately, Cedar Market has the answer: quinoa sushi. Wait, what? Isn’t the essence of sushi that it is prepared with rice? According to David Bodner, Cedar Market director of operations, “Our sushi sells really well during the year. We have had sushi on Pesach before, naruto rolls, but this year we worked with the RCBC to make it happen with quinoa.” Naruto rolls use thinly sliced cucumber on the outside instead of rice.

Cedar Market’s sushi chefs will take many of the year-round sushi options and prepare them with quinoa rather than rice. Bodner emphasized that everything on the menu can still be made without the quinoa if desired. Among the offerings will be the Teaneck roll, dragon roll, rainbow roll and others, including quinoa sushi sandwiches and quinoa sushi matzah pizza.

“We are excited to see how this works,” said Bodner.

Regarding any ingredient changes other than the quinoa for rice substitution, Bodner noted that they will use imitation vinegar and soy sauce, as well as teriyaki sauce, all of which are kosher for Passover use. “The flavors of the fish and vegetables will be what people are used to,” he said. “There is kosher for Passover kani, so all of those options will be available.”

As in past years, Cedar Market will have “large varieties of brands at the best possible pricing we can give our customers,” commented Bodner. The store will also have an expanded kitniyot section this year.

The quinoa sushi will be available for purchase beginning on Friday, April 19, and continuing through Chol Hamoed. However, for those who may want to spice up their Seders with sushi options, please contact the store in advance to place an order.

The best part? Everything on the Passover sushi menu is still buy two get one free!

Store hours for Pesach will be as follows: Friday, April 19, the store will be open from 7 a.m. to 5 p.m. On Monday and Tuesday, April 22 and 23, it will be open from 7 a.m. to 9 p.m. On Wednesday, April 24, it will open at 7 a.m. and close at 11 p.m., and on Thursday, April 25, it will open at 7 a.m. and close at 5:30 p.m.
