  • 1 cup quick oats
  • 1 ⅓ cups unsweetened almond milk
  • 1 tablespoon white or apple cider vinegar
  • ¼ cup unsweetened applesauce
  • 1 tablespoon baking powder
  • ⅓ cup coconut sugar
  • 1 cup white whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ⅓ cup chocolate chips

Preheat oven to 350 F.

Whisk first four ingredients in a bowl. Let it sit for 10 minutes. (Don’t skip this step!)

Combine dry ingredients (including most of the chocolate chips—reserve some to sprinkle on top) and mix well.

Mix wet and dry mixtures together, stirring just until combined. Do not overmix.

Fill the muffin cups with batter. Sprinkle with remaining chocolate chips.

Bake for 15-18 minutes, until a toothpick inserted into the center comes out clean.
