Quinoa in a dessert? Don’t roll your eyes just yet! These quinoa chocolate crunch bars are honestly the perfect treat: crunchy, chocolatey and made with just three ingredients. Yup, three. And funnily enough, I like quinoa better in desserts than when it’s cooked. The most important thing is to nail the toasting part of the process. Once your quinoa is toasted, it’ll give that perfect crunch. If you want a snack that’s super easy to make but still feels like a total indulgence, this is your go-to. Don’t nix it til you try it!
Quinoa Chocolate Crunch Bars
Ingredients:
- 1/4 cup raw quinoa
- 1/2 cup melted chocolate chips
- 1/3 cup peanut butter
Instructions:
Toast the quinoa. Do this by heating up a saucepan on low to medium heat and pouring in your quinoa. Stir the quinoa around until you hear popping, stir for another minute or two and remove off heat.
Melt your chocolate chips (you can melt with 1 tablespoon of coconut oil for easier melting).
Add in creamy peanut butter/nut butter.
Mix together well and line a container with parchment paper. Pour your mixture onto the piece of parchment paper and freeze for an hour to two.
Slice into bars and enjoy!
