To be successful in a sometimes uncertain environment, a small business must be able to adapt quickly to changing circumstances. KoSoCo, a Highland Park-based Vaad-certified provider of smoked meats and side dishes, did precisely that on the weekend before July 4.
KoSoCo was to be the only kosher food vendor at the borough of Highland Park’s July 4th fireworks event scheduled for Sunday night, July 2 in Donaldson Park. Due to a forecast of inclement weather, the borough canceled the event on July 1. The KoSoCo crew promptly announced in emails and on Facebook that they’d hold a pop-up store in Congregation Ahavas Achim in Highland Park to sell the food they’d prepared for the fireworks event. Roughly 100 orders were filled that day, resulting in many happy customers and a very successful sale for KoSoCo.
