With Lag B’Omer around the corner, there’s no better way to celebrate than with a delicious (and pareve) s’mores pie!
Ingredients:
- Graham crackers (pareve)
- Sugar
- Margarine
- Brownie mix (pareve)
- Eggs
- Vegetable oil
- Water
- Marshmallows
- Chocolate bar (pareve)
For Pie Crust:
1. Preheat your oven to 350 F.
2. Grease your pie pan.
3. Crush 14 graham crackers in a zip lock bag with a rolling pin (crush until very fine).
4. Add ¼ cup sugar to your graham cracker mix.
5. Pour 1 stick of melted margarine (½ cup) into the graham cracker/sugar mix.
6. Shape the mix into pie crust in a pan. Use a spoon to firm out the pie crust, particularly where the bottom of the crust meets the sides.
7. Cook for about 10 minutes.
For Brownies:
1. Make brownie mix according to the directions on the box (usually requiring 2 eggs, 3 tablespoons of water, and ¾ cup vegetable oil).
2. Pour about ¾ of the brownie batter onto the cooked pie crust.
3. Bake at 350 F for about 15-18 minutes until brownie is fully cooked.
For Marshmallows and Chocolate:
1. Top with about 16 marshmallows (¾ bag of marshmallows).
2. Turn on your oven broiler (and oven light) and broil for about 45 seconds at most. Keep a close eye on the marshmallows as they can quickly burn.
3. Once the marshmallows are browned, immediately remove the pie from the oven and let it cool.
4. Once cooled, add pieces of your favorite chocolate. I used pareve Elite dark chocolate from Israel.
5. Slice and enjoy!
