New Take on a Classic: PB&J Bowls

PB&J sandwiches are a childhood staple, one that follows many into adulthood. But as health has taken the forefront, the old sandwich has gotten demoted to the back burner. It’s simple to revive the delicious combination of fl avors, without compromising on necessary nutrients, creating an even more memorable meal that you can serve proudly at any table.Homemade Jam, makes ~1 cupIngredients• 1 12-oz bag of frozen berries• 1 tbsp chia seeds• 2-3 tbsp honey or maple syrup, according to taste

PB&J Bowl, makes four servingsIngredients• 2 cups wheat berries• 4 tbsp peanut butter• 4 tbsp homemade jam• Optional: splash of milk, cinnamon, vanilla extract

Begin making the jam: Combine the frozen berries and sweetener in a medium saucepan over medium heat. Cover and bring to a simmer, stirring frequently. After about five minutes, when the berries are warmed and saucy, lightly mash. Reduce heat to medium-low. Add the chia seeds and stir, until it looks like jam, about 15–20 minutes. It will thicken more as it cools!* As the jam is thickening, cook the wheatberries according to package.

Divide the wheatberries, peanut butter and jam into four bowls. Add any additional toppings as desired.

Mix and enjoy!

*Store leftover jam in an airtight container in the fridge, for up to 2 weeks.
