Carrot Muffins
In this week’s parsha, Moshe speaks to everyone in the land before they enter Israel. An important thing is that seeing is much more important than hearing and Moshe was the first one to see Hashem (in the burning bush). That’s why we will be making carrot muffins—because carrots help you see!
You will need:
1 cup of raisins
2 cups of warm water
2 cups of all purpose flour
1 tablespoon of baking powder
2 teaspoons of baking soda
1 teaspoon of ground cinnamon
1 teaspoon of kosher salt
4 lg eggs
1 cup of vegetable oil
3/4 cups of brown sugar
3 cups of shredded carrots
This makes eight yummy muffins for your family.
1. Combine raisins and hot water in a small bowl and let them soak for 15 minutes. Then drain raisins and set raisins aside.
2. Now set your oven to 350 degrees. And grease muffin cups.
3. Now in a large bowl sift flour, baking powder, baking soda, salt and cinnamon.
4. And in another bowl mix oil, brown sugar and beat well.
5. Then mix carrots and raisins and combine both bowls and put batter in cups.
6. Now bake for 20-30 minutes and insert a toothpick. If it’s clear it is ready. If not, put it in for another 5 mins. Let it sit for 30 mins.
