We are used to eating meals on a daily basis. Sitting down, unwinding and diving into a delicious plate filled with food. But when life gets busy and time for eating becomes an added task rather than an enjoyable experience, we aim for a quick meal. Sometimes that means having cereal and milk more often than not, boxed and packaged products throughout the day or, at the worst, not even eating at all.

I’ve started to love creating bite-sized food that’s easy to meal-prep and makes eating your meals a much easier task. These bites don’t need to only be saved for hectic times; they make for great appetizers and snacks, too.

The benefit of bite-sized recipes is that you can pop one, two, three (four, five—you choose) bites and you’re full! They can be prepared ahead of time and stored in the fridge/freezer. If you know me, you know my recipes don’t take too much effort, and the same goes with these bites. They’re super easy to make, and leave you excited for the next time you’re hungry. So without further ado, let’s dive right in.

Pizza cups

Pizza Cups

Where are my pizza fans? Pizza is a classic, and these bites are in no way substituting them, however they are filling your pizza needs in an easy and, may I say, healthier way, too. Introducing pizza cups. Yes, not a pizza slice, but a pizza cup!

Customizing the recipes to how you like is part of the cooking fun. You can add veggies to these pizza cups, you can top them off with toppings or choose to keep them simple with just the basic ingredients. These could not be easier to make, are perfect for the pizza lover, and will get everyone coming back for seconds.

Ingredients:

  • 1 cup shredded cheese
  • ¾ cup tomato sauce
  • 1 cup choice of chopped veggies
  • Salt and pepper
  • 4-5 wraps
  • Spray oil

Instructions:

  1. First, you’ll want to cut the wrap into 4 triangles.
  2. Spray a muffin tin/muffin mold with cooking spray and place 2 wrap triangles inside. You’ll want to flatten the wraps into the muffin mold on opposite sides of the mold in order to create a cup.
  3. Mix your veggies with tomato sauce, cheese, salt and pepper.
  4. Scoop the mixture and place it in the wrap cups.
  5. Top with more tomato sauce and cheese.
  6. Bake at 375 F for 10-12 minutes.
Spinach artichoke dip bites

Spinach Artichoke Dip Bites

Next is one of my favorite bites to serve to a crowd. You’ll want to start these bites off by flattening a puff pastry square in a muffin mold and then filling the spinach-artichoke mixture inside. These come out beautiful and should please even the pickiest of eaters!

Ingredients:

  • 2 cups frozen spinach
  • 1 cup canned artichoke
  • ½ cup softened cream cheese
  • ¾ cup shredded cheese
  • ½ teaspoon minced garlic/garlic powder
  • Salt and pepper for seasoning
  • Puff pastry dough

Instructions:

  1. Preheat the oven to 350 F.
  2. Chop the spinach and artichoke and add them to a bowl.
  3. Add in the softened cream cheese, shredded cheese and seasoning, and mix.
  4. Spray a mini muffin tin with spray oil (any works)
  5. Cut your puff pastry dough into 2-inch squares. Place the dough in each muffin tin and create a little indent—flatten it in the center to form a cup shape.
  6. Place the spinach artichoke batter inside and optional—top with more cheese.
  7. Bake for about 20 minutes (until dough is baked and golden brown).
Froyo bites

Froyo Bites

Now that the more savory bites are out of the way, let’s move on to my personal favorite: froyo bites. Froyo (aka frozen yogurt) has been one of my favorite foods since I was a kid. I’d love to go to the local 16 Handles and control the lever of the froyo machine, watching as it came out in perfect shape and consistency each time. For me it was always froyo over ice cream, and the love for it never died. So, while having froyo from a store or buying my own froyo machine weren’t the most practical ideas, I started making these froyo bites. Now, don’t get me wrong, these froyo bites are in no way taking away from froyo. They’re just my favorite way to enjoy a summertime snack without having to schlep to the store each time.

Ingredients:

  • 1 ½ cup greek yogurt
  • 4 tablespoon peanut butter (or nut butter of choice)
  • 3 tablespoons maple syrup

Optional: 1 cup cookies or a different toppings you’d like to mix in. You can mix in chocolate chips, fruit, your favorite cereal.

Instructions:

  1. Mix the yogurt, peanut butter and maple syrup well until smooth.
  2. Crush the cookies (or toppings of choice).
  3. Mix the crushed cookies in with the yogurt mixture. This adds an extra fun element to these bites.
  4. Fill up a mini muffin mold with the mixture.
  5. Optional: Blend some more of your desired toppings until they’re turned into more of a finer texture and top the froyo bites with it
  6. Freeze overnight and pop out when done. They might need a few minutes to thaw for the ultimate creamy texture. Enjoy!
