Popovers for Mom on Mother’s Day

Ingredients:

¼ teaspoon salt

1 cup milk

2 eggs

1 cup flour

1 tablespoon butter, plus extra for greasing muffin tins

Procedure:

Using a muffin tin, melt a dab of butter in each individual tin (done on low oven temperature).

Mix flour and salt together. In another bowl, beat eggs, add milk, butter and then add flour, making a smooth batter. Best to use a wooden spoon.

Fill hot muffin tins 1/3 full. Bake at 450° for 30 minutes and then lower temperature to 350° for an additional 15 minutes.

Keep oven door closed the entire time.

Popovers must be eaten hot—fill with butter and jam or jelly. You won’t be able to eat only one!

This recipe yields 6 large or 9 small popovers (can easily be doubled).
