Easy, Tasty and Quick Tomato Soup

As the colder air sets in we are all more receptive and anxious for a hot bowl of soup at the end of the day. Recently I came upon an old recipe that takes no time to prepare and tastes really yummy. It can be made in advance or within an hour prior to serving. I find that the longer it sits, the thicker and more tasteful it gets. Hope you like it!

Tomato Onion Soup

  • 3 cups chopped onion (2 large)
  • 1 6-oz. can of tomato paste
  • 3 tablespoons oil
  • ½ cup crushed noodles (skinny)
  • 4 cups water
  • 2 teaspoons consomme mix
  • 1 teaspoon salt
  • Dash pepper

Directions:

Saute the onions over medium heat in the oil until they are lightly browned.

Add the noodles and continue cooking, stirring frequently until the noodles are light brown and the onions darker brown.

Add the rest of the ingredients, bring to a boil and simmer, covered, for 15 minutes.

Gets thicker as it cooks.

Yield: 4-6 servings.
