Pesach Baking Can be Easy

Baking for Pesach is somewhat challenging for some, but if you have the right recipes, it is fairly easy. I highly recommend buying a very good mixer with two bowls because so many of the recipes require separating eggs. If you are a Pesach “stayathomer,” tell your husband this is not a luxury, but a necessity. Here are a few of my favorites. Enjoy!!!

Chocolate Marshmallow Rollup

1 bag (10 ounces) pareve chocolate chips

1 stick margarine (4 ounces)

1 bag miniature marshmallows

1/2 cup chopped walnuts or pecans

Melt chocolate over a double boiler pan or in a microwave. Be careful not to burn the chocolate. Check your melt setting on your microwave. Add margarine to warm melted chocolate; stir slowly until melted.

Let mixture cool. Then gently stir in marshmallows and nuts (Marshmallows should not melt!) Pour into one end of a sheet of parchment paper, roll into a log and freeze. When completely frozen, slice into 1/4” – 1/2” rounds. This looks so pretty when cut.

Chocolate Cake Roll Up

6 eggs separated

5 tbls. potato starch

½ cup of sugar

powdered sugar

Beat whites till foamy. Add sugar until mixture peaks. Reduce mixer to low. Fold in potato starch. Pour into a prepared (with parchment paper/sprayed) cookie sheet with lip. Bake at 350˚ for 20-25 minutes. When done, have prepared 2 towels or a large bath towel on a table sprinkled with powdered sugar and turn the cake out upside down on towel. Peel off paper and roll lengthwise in towel. Let cake cool.

Filling for Cake Roll

Make mixture:

2/3 cup powdered sugar

1/3 cup cocoa

2 cups whipped topping (unbeaten)

1 ½ tsp vanilla extract

Yield: 3 ½ cups

Combine powdered sugar and cocoa in large mixing bowl. Gradually stir in the whipped topping. Add vanilla. Beat at low speed until blended. Then beat at high speed until stiff peaks form.. Then unroll your cake; spread mixture on top and re-roll. You can freeze the roll or you can serve as is or make a chocolate drizzle for top if you desire.

Savti’s Easy Marble Cake

6 eggs

2 cups sugar

1 cup oil

2 tsp. vanilla

2 tsp. baking powder

1 ½ cups cake meal

½ cup chocolate syrup

Preheat oven to 350˚. Beat eggs and sugar. Add oil, vanilla, baking powder and cake meal. Grease two 8 inch round pans (or you can make it 9 x 13 if you wish). Pour 2/3 batter into pans. Mix until smooth. Pour batter into the pans and then add ¼ cup chocolate syrup into each the batter-filled pans, then swirl it around the cake pan to create a marble effect. Bake 45-60 minutes. Test with toothpick. It if comes out clean, it’s ready.

Chocolate Chippers

1 cup margarine

¾ cup brown sugar

¼ cup sugar

2 eggs

1 cup cake meal

¼ cup potato starch

1 package of vanilla pudding

¾ tsp. salt

2 cups chocolate chips

Preheat the oven to 350. In mixer bowl cream margarine and sugars. Add the eggs until well mixed. Add in the cake meal, potato starch, vanilla pudding mix, baking soda and salt. Add in the vanilla and chocolate chips. Drop cookies onto a parchment lined sheet and bake for 12-15 minutes until the edges are slightly brown.
