Do you need an easy and flavorful veggie side? Here is one of my go-to’s. And guess what. You can also use frozen string beans! You can cook them for only 10-15 minutes if you want a crunchier texture. I like my string beans a bit mushy, though. A cool way to use any frozen vegetable is to take a boiling hot roast chicken out of the oven and then add your frozen vegetable directly on top. Cover the entire dish with tin foil tightly. Place it back in the oven, but turn off the oven. Let it sit in there for about 10-15 minutes. It will become perfectly steamed as well as flavorful from the chicken. If you have potatoes or rice under there, you’ve got yourself a one pot meal. Enjoy!
Ingredients:
- 1 lb fresh string beans
- 2 tbsp olive oil
- 1 tsp kosher salt
- ¼ tsp freshly ground black pepper
- ½ tsp Green Goddess dressing from Trader Joe’s (Use dried basil instead if you don’t have this specific spice.)
- 2 tbsp slivered almonds (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- Wash and trim the ends of the string beans.
- Place the string beans on a real cookie sheet (a baking sheet will work too), making sure they are spread out evenly.
- In a small bowl, mix together the rest of the ingredients. Drizzle the olive oil mixture over the string beans and toss them to coat evenly.
- Roast the string beans in the preheated oven for 20 minutes, or until they are tender and slightly browned.
- Remove the string beans from the oven and transfer them to a serving dish.
- Serve immediately and enjoy your delicious roasted string beans!
