Roast two sweet potatoes and three beets with olive oil and salt.
Dice into small pieces and combine with chopped arugula and candied nuts.
Dressing:
6 Tbsp. vinegar
6 Tbsp. sugar
4 Tbsp. water
2 Tbsp. olive oil
Mix together and pour over salad, tossing lightly just before serving.
