WDS Students Make Maple Syrup

The WDS students are taking advantage of the school’s beautiful 26-acre campus on the Long Island Sound to learn first hand how maple syrup is made, from tree to bottle! As the leaves changed color in the fall, WDS students classified and marked the school’s trees with beautiful laser-cut tags designed and created in the WDS science lab. Students learned the role that the weather plays in determining the right time to tap trees, and in early February, when the freeze and thaw patterns were just right, the innovative WDS Science faculty led classes outside to tap the maple trees they had marked in the fall. With the spiles hammered and the buckets hung, the crystal clear sap is flowing quickly. To get the amber syrup students are after, they are boiling down 40 to 60 times the amount of sap with the help of the school’s incredible kitchen staff. WDS students and faculty are excited to continue taking part in this incredible process.
