Who said fillings need to have all of the fun? Get ready for Purim with these delicious and moist mint-flavored brownie hamantaschen! These have a special nod to everyone’s favorite green witch, Elphaba from the Broadway show Wicked.

Directions:

1) Refrigerate your favorite hamantaschen dough overnight.

2) Add 2 teaspoons of peppermint flavor to your dough (add extra flour to your dough if it is sticky).

3) Knead 4-5 drops of green gel food coloring into your hamantaschen dough, until the color is evenly distributed (wearing gloves is recommended).

4) Place dough onto wax paper and cover dough with wax paper.

5) Using a rolling pin on top of the wax paper, roll out the hamantaschen dough to your desired thickness.

6) In a separate bowl, mix your brownie filling:

  • 3/4 cup pareve brownie mix
  • 1/4 cup of vegetable oil
  • 1 teaspoon peppermint flavor

7) Add one spoonful of brownie filling to each circle.

8) Shape your hamantaschen into triangles, gently sealing the edges of the corners.

9) Bake for 8-10 minutes at 350 and enjoy!
