Susie’s Honey Cake

Ingredients:

2¼ cups flour

2 tsp baking powder

1 tsp baking soda

2 tsp ground cinnamon

3 eggs

1 cup liquid honey

¾ cup canola oil

½ cup cola (diet or regular)

Preheat oven to 325°F. Spray a 12-cup fluted tube pan with non-stick spray.

In a food processor fitted with the steel blade, process flour, baking powder, baking soda, and cinnamon until blended, about 10 seconds. Empty into another bowl.

Process brown sugar and eggs for 30 seconds. Do not insert pusher in feed tube. Add honey and oil; process 1? minutes longer. Remove cover and add dry ingredients. Pour cola on top. Process with 4 or 5 quick on/off pulses just until batter is blended. Do not over-process.

Immediately remove processor bowl from base and pour batter into prepared pan.

Bake for about 1 hour, until cake tests done. Let cool for 20 minutes before removing from pan. This cake keeps very well.

Sylvia’s Honey Cookies

½ cup margarine softened

½ cup brown sugar packed

½ cup honey

1 egg

1½ cups flour

½ tsp baking soda

½ tsp salt

½ tsp cinnamon

Preheat oven to 375°F. Beat together the margarine, brown sugar, honey, and egg in a bowl until smooth. Stir in rest of ingredients. Drop teaspoons filled with dough onto a greased or parchment-lined sheet (always the best option). Bake about 7 to 10 minutes or until the cookies are set and edges begin to brown. The cookies will still look somewhat shiny when they are done. Cool. Enjoy.

Honey Noodle Kugel

8 oz. medium noodles

¼ cup margarine melted

4 eggs beaten

½ cup honey

½ cup raisins

4 apples grated

1 tsp salt

1 tsp cinnamon

Crisp topping

(Mix 1/3 cup bread crumbs and 1 tsp cinnamon; drizzle ¼ cup honey over this mixture and stir until crumbs are coated)

Cook noodles according to package directions. Drain and place in large bowl. Add margarine; mix well. Cool 10 minutes. Add eggs, honey, raisins, apples, salt, and cinnamon; mix well. Place noodle mixture in greased 9-inch square baking pan. Top with crisp topping and cover with foil. Bake at 350°F for 50 minutes. Uncover and bake 10 to 15 minutes more or until brown on top. Enjoy.
